Kombucha Powder. Fermentation increases polyphenol bioavailability by up to 3.87x. The organic acids produced during fermentation reduce gut wall permeability, which lowers the amount of bacterial toxin that enters the bloodstream. Two human RCTs (University of Sydney, 2023, and Georgetown University, 2023) found that kombucha blunts the post-meal blood sugar spike, and that effect correlates with a smaller post-meal toxin surge.
